Soba Noodle Salad

Ingredients
8.8 ounces Eden Soba - 40% Buckwheat, 1 package any Eden Soba
8 ounces organic soft tofu, cubed
1/2 cup carrots, julienned, blanched 1 minute
1 cup green beans, stems removed, chopped in 1 inch pieces and blanched 3 minutes
Dressing
2 tsp Eden Toasted Sesame Oil
2 Tbsp Eden Shoyu Soy Sauce
1 Tbsp lemon juice, freshly squeezed
1 Tbsp orange juice, freshly squeezed
1 Tbsp lime juice, freshly squeezed
2 Tbsp Eden Mirin
1/4 cup scallions, finely chopped
1/2 tsp fresh ginger root, finely grated

Directions
Cook soba as package directs, rinse under cold water in a strainer and drain. Mix the dressing ingredients together in a measuring cup. Place the tofu cubes in a small mixing bowl and pour the dressing over. Toss gently to coat the tofu with the dressing. Place the soba and blanched vegetables in a serving bowl. Pour the tofu and dressing over the soba, and gently toss to coat the soba with dressing. Serve.
