Mixed Greens with Cherries & Roasted Pumpkin Seeds

6 Tbsp Eden Red Wine Vinegar
Eden Organic Apple Cider or Organic Brown Rice Vinegar

2 Tbsp Eden Organic Brown Mustard

5 Tbsp Eden Extra Virgin Olive Oil

1/2 tsp Eden Sea Salt

1/8 tsp freshly ground black pepper, or to taste

1 Tbsp Eden Organic Barley Malt Syrup

2 tsp organic maple syrup

10 ounces mixed baby salad greens
or baby spinach

1 cup red onion, thinly sliced into half-rounds

1/2 cup Eden Dried Montmorency Cherries

4 ounces Eden Organic Roasted Pumpkin Seeds, 1 package
Eden Organic Spicy Pumpkin Seeds

To make the dressing, combine the vinegar, mustard, olive oil, sea salt, pepper, barley malt and maple syrup in a small bowl or a measuring cup. Mix the dressing with a whisk or fork. Place the spinach or baby salad greens in a salad bowl. Toss in the cherries, red onion and pumpkin seeds. Serve with the dressing on the side.
