Spinach Salad with Cherries & Roasted Pumpkin Seeds

To make the dressing, combine the vinegar, mustard, olive oil, sea salt, pepper, barley malt and maple syrup in a small bowl or a measuring cup. Mix the dressing with a whisk or fork. Place the spinach or baby salad greens in a salad bowl. Toss in the cherries, red onion and pumpkin seeds. Serve with the dressing on the side.
