Pasta White Bean Salad

Pasta White Bean Salad


12 ounces Eden Vegetable Spirals, 1 package
or Eden Kamut Vegetable Spirals or any Eden Spiral Pasta

1/2 pound pea pods, blanched 1 minutes and chopped

1 cup green onions, chopped

1 medium red bell pepper, seeded and sliced into strips

30 ounces Eden Navy Beans, 2 cans, drained
or Eden Great Northern Beans

4 cloves garlic, pressed

3 Tbsp Eden Toasted Sesame Oil

2 Tbsp Eden Ume Plum Vinegar, or to taste


Cook pasta as package directs, al dente, drain, and cool. While pasta is cooking, blanch the pea pods in 3 cups boiling water for 1 minute. Remove, rinse quickly under cold water, and drain. Mix pasta, beans, vegetables, and garlic. Add toasted sesame oil and ume plum vinegar to the salad, mix and serve.
