Crostini with Black Soybean & Tomato

Serves 7 | Prep Time 10 minutes | Cook Time 5 minutes

Crostini with Black Soybean & Tomato

Ingredients

30 ounces Eden Organic Black Soybeans, 2 cans, drained and rinsed

1/4 tea Eden Sea Salt

4 cloves garlic, finely minced

1 Tbsp fresh thyme, finely minced

1 Tbsp fresh rosemary, finely minced

1 Tbsp fresh parsley, finely minced

1/4 cup Eden Organic Diced Tomatoes w/Green Chilies, well drained

1 large baguette, sliced into 1 inch thick slices, toasted

1/4 cup scallions, finely chopped for garnish

(Add All Eden Ingredients to Shopping Cart)

Directions

Heat the oil in a skillet and sauté the garlic, thyme, rosemary and parsley. Add the beans, tomatoes and sea salt. Mix and cook until warm. Remove from the heat.

Place a tablespoon of bean mixture on top of each slice of toasted baguette. Sprinkle scallions on top of each and place on a serving platter.
