Macaroni Salad

Serves 8 | Prep Time 1 hour 10 minutes | Cook Time 15 minutes

Macaroni Salad

Ingredients

12 ounces Eden Organic Flax Rice Spirals
or any Eden Organic Spiral or Elbow Pasta

1/4 cup green onions, finely chopped

1 cup celery, diced

1/2 cup fresh parsley, chopped

1/2 cup pitted black olives

Dressing

1/2 cup organic tofu mayonnaise, prepackage or see Eden recipes

2 Tbsp Eden Organic Brown Mustard

2 Tbsp Eden Red Wine Vinegar

1/8 tsp Eden Sea Salt

1/8 tsp black pepper, or to taste

(Add All Eden Ingredients to Shopping Cart)

Directions

Prepare pasta as package directs. Rinse and drain. Add onion, celery, parsley and olives. Combine mayonnaise, mustard and vinegar. Add to pasta and vegetables. Adjust seasoning with black pepper and salt, if desired. Chill 1 hour before serving.

Great served with Eden Organic Baked Beans!
