Heat oil in a medium skillet and sauté the onions for 2 to 3 minutes. Add the garlic and sauté another 1 to 2 minutes. Add all remaining ingredients except the parsley, stir and bring to a boil. Reduce the flame to medium-low and simmer for 15 to 20 minutes, stirring occasionally. Turn off the flame and mix in the parsley. Place in a serving dish. Serve as a side dish with cooked grains, pasta or whole grain bread.
