Quick Black Soybean Salsa

1 cup Eden Black Soybeans, 1 can drained

1 cup Eden Diced Tomatoes w/Green Chilies, drained

1 cup diced fresh tomato

1/2 cup red bell pepper, diced

1/3 cup yellow bell pepper

1/2 cup red onion, minced

1/3 cup fresh parsley, minced

3 Tbsp lime juice, freshly squeezed

2 tbsp Eden Red Wine Vinegar,

2 Tbsp lemon juice, freshly squeezed

2 Tbsp green onion, chopped

1 tsp ground cumin

3/4 tsp Eden Sea Salt

1/2 tsp ground coriander
or 2 tsp dried cilantro flakes


Toss all ingredients together in a bowl. Taste, and add extra citrus juice and seasoning, if desired. Great served with Eden Chips or Crackers.
