Quick Black Soybean Salsa

Ingredients

  • 1 cup Eden Black Soybeans, 1 can drained
  • 1 cup Eden Diced Tomatoes w/Green Chilies, drained
  • 1 cup diced fresh tomato
  • 1/2 cup red bell pepper, diced
  • 1/3 cup yellow bell pepper
  • 1/2 cup red onion, minced
  • 1/3 cup fresh parsley, minced
  • 3 Tbsp lime juice, freshly squeezed
  • 2 tbsp Eden Red Wine Vinegar,
  • 2 Tbsp lemon juice, freshly squeezed
  • 2 Tbsp green onion, chopped
  • 1 tsp ground cumin
  • 3/4 tsp Eden Sea Salt
  • 1/2 tsp ground coriander
    or 2 tsp dried cilantro flakes

Directions

Toss all ingredients together in a bowl. Taste, and add extra citrus juice and seasoning, if desired. Great served with Eden Chips or Crackers.
