Gazpacho - Chilled Tomato Soup

Ingredients

  • 15 ounces Eden Crushed Tomatoes w/Basil
    or any Eden Crushed Tomatoes
  • 14.5 ounces Eden Diced Tomatoes, do not drain
    or any Eden Diced Tomatoes
  • 1 cup fresh tomatoes, diced
  • 1 cup cucumber, diced
  • 1 cup green bell pepper, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup yellow bell pepper, diced
  • 1/4 cup fresh parsley, minced
  • 3 Tbsp Eden Red Wine Vinegar
  • 1 1/2 tsp Eden Sea Salt
  • 3 Tbsp lemon juice, freshly squeezed
  • 3 Tbsp lime juice, freshly squeezed
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
    or ground coriander
  • 1 tsp dried basil
    or 1 Tbsp minced fresh basil
  • 1 tsp dried cilantro

Directions

Working in batches, blend all ingredients in a blender except the fresh tomatoes, bell peppers and cucumber. Pour into a medium mixing bowl. Add the fresh tomatoes, bell peppers and cucumber and mix thoroughly. Chill for at least 1 hour before serving. Great with cornbread!
