Gazpacho - Chilled Tomato Soup

Gazpacho - Chilled Tomato Soup

Ingredients

14 to 15 ounces Eden Organic Crushed Tomatoes w/Basil
or any Eden Organic Crushed Tomatoes

14 1/2 ounces Eden Organic Diced Tomatoes, do not drain
or any Eden Organic Diced Tomatoes

1 cup water

1 medium green bell pepper, diced

1 medium red bell pepper, diced

2 medium cucumbers, peeled and chopped

1 cup green onions, thinly sliced

2 cloves garlic, pressed

3 Tbsp Eden Red Wine Vinegar

1 Tbsp Eden Shoyu Soy Sauce, or to taste
or 1 teaspoon Eden Sea Salt

1 tsp ground cumin
or ground coriander

3 Tbsp lemon juice, freshly squeezed

3 Tbsp lime juice, freshly squeezed

2 tsp dried basil

2 tsp dried dill

(Add All Eden Ingredients to Shopping Cart)

Directions

Combine all ingredients and chill for at least 1 hour before serving. Great with cornbread!
