Couscous Cake with Dried Fruit Topping

Directions
Place the apples, apricots and pears in a bowl. Cover with 4 cups cold water and 1 cup apple juice. Let soak for 2 hours. Remove fruit, squeeze juice into bowl. Reserve the soaking water for cooking. Chop the fruit, place in a sauce pan with all the soaking water, raisins and sea salt. Cover, bring to a boil and simmer for 10 minutes. While the fruit is cooking, bring the 3 cups of juice to a boil, add the couscous, cover, turn the flame off and allow to sit for 5 minutes.
Remove the couscous and place it into a cake pan or spring form cake pan. Moisten your hand slightly with cold water and press the cous cous firmly down into the cake pan. Set aside. Add the dissolved kuzu to the fruit mixture, stirring constantly until thick. Spread the topping evenly over the cake. Let sit for 1 hour before serving to firm up or refrigerate to chill before serving.
