Flour Tortillas

Ingredients
Directions
Combine dry ingredients in a mixing bowl. Combine oil and water in a cup. Slowly add the water to the dry ingredients and knead several minutes to form a soft dough. If the dough is too moist, add a little more flour. Cover the bowl with a warm, damp towel and let sit for about 10 minutes. Divide the dough into 12 equal size portions and roll into balls. Place in a tortilla press or roll out each ball on a lightly floured board or table. Cover the tortillas with a towel or baking paper to prevent them from drying out until you have finished.
Heat up a cast iron skillet or griddle over a medium flame. Place one tortilla at a time in the hot, dry skillet and cook for approximately 1 minute on each side or until little brown speckles appear on the surface. Remove and keep warm in the oven, on a low temperature. Repeat until all tortilla have been cooked. See Eden's web site for several different refried bean and salsa recipes.
