Two Tomato Gazpacho

Two Tomato Gazpacho

Ingredients

28 ounces Eden Organic Crushed Tomatoes w/Roasted Onion & Garlic, do not drain
or 29 ounce amber glass jar Eden Organic Diced Tomatoes w/Roasted Onion

28 ounce Eden Organic Whole Tomatoes w/Basil, do not drain

2 Tbsp onion, chopped

2 Tbsp Eden Red Wine Vinegar

2 cloves garlic, chopped

1 1/2 tsp Eden Sea Salt

1/2 cup fresh basil, chopped

1/2 cup green bell pepper, chopped

1/2 tsp ground cumin

1 medium red bell pepper, seeded and small diced

1 small cucumber, peeled, quartered, and chopped

(Add All Eden Ingredients to Shopping Cart)

Directions

Place all ingredients except the cucumber and red pepper in a blender or food processor. Pulse until smooth. Place in serving bowl. Mix in cucumber and red pepper. Chill for 2 hours and serve.
