Vegetable Bean Medley

Vegetable Bean Medley


1 Tbsp Eden Toasted Sesame Oil

1 medium onion, diced

1 cup organic sweet corn, fresh or frozen

1 cup yellow bell pepper, diced

14 1/2 ounces Eden Diced Tomatoes, drained
or Eden Diced Tomatoes w/Basil, or Eden Diced Tomatoes w/Roasted Onion & Garlic

15 ounces Eden Black Beans, drained
or Eden Black Soybeans

1 Tbsp Eden Ume Plum Vinegar, or to taste

1 tsp dried basil
or dried dill


Heat oil and sauté onion until translucent. Add corn, yellow pepper and tomatoes. Simmer for 5 minutes. Add beans, vinegar and herbs. Simmer 3 to 5 minutes. Delicious served chilled, hot or room temperature.
