Vegetable Bean Medley

Cook Time 15 minutes
Heat oil and sauté onion until translucent. Add corn, yellow pepper and tomatoes. Simmer for 5 minutes. Add beans, vinegar and herbs. Simmer 3 to 5 minutes. Delicious served chilled, hot or room temperature.
