Carrot Cake

Serves 10 | Prep Time 10 minutes | Cook Time 30 minutes

Ingredients

1 cup organic whole wheat flour

1 cup organic unbleached white flour

1/4 tsp Eden Sea Salt

1 Tbsp non-aluminum baking powder

1/2 tsp baking soda

1 tsp ground cinnamon
or allspice

1 cup organic seedless raisins

1 1/2 cups grated carrot

1/4 cup Eden Organic Safflower Oil
or Eden Extra Virgin Olive Oil

3/4 cup Edensoy Vanilla
or Edensoy Extra Vanilla

1 Tbsp Eden Organic Apple Cider Vinegar

1/3 cup organic maple syrup

1/2 cup Eden Organic Apple Sauce

Directions

Preheat the oven to 375°. Mix the flours, sea salt, baking powder, baking soda, raisins, carrots and cinnamon ogether in a mixing bowl. Combine the oil, Edensoy, and vinegar. Mix well and let sit 5 minutes. Combine with the dry ingredients. Add the maple syrup and apple sauce. Stir until the batter is smooth. Lightly oil two 8" round cake pans or one 9" x 13" sheet can pan and lightly dust with a little flour. Pour out the flour from the pan(s). Pour the batter into the pan(s) and bake for 22 to 25 minutes until golden brown. Remove and allow to cool before adding your favorite icing or topping.
