Lentil Vegetable Soup

Lentil Vegetable Soup


15 ounces Eden Lentils w/Onion & Bay Leaf, do not drain

14 1/2 ounces Eden Diced Tomatoes w/Green Chilies, do not drain

14 to 14 1/2 ounces Eden Crushed Tomatoes w/Basil
or Eden Crushed Tomatoes w/Roasted Onion & Garlic

2 Tbsp Eden Extra Virgin Olive Oil

2 cloves garlic, minced

1 cup onions, diced

1/2 cup carrots, sliced into rounds

1/2 cup green bell pepper, diced

1/4 cup celery, diced

1 medium organic potato, peeled and cubed

3 cups water

1/2 tsp dried basil

1 Tbsp Eden Shoyu Soy Sauce

1 Tbsp Eden Mirin, optional

1/4 cup fresh parsley, minced for garnish

1/8 to 1/4 tsp freshly ground black pepper


Heat oil in a medium sauce pan, sauté garlic and onions for 2 to 3 minutes. Add lentils, tomatoes, crushed tomatoes, celery, carrot, green pepper, potatoes, basil and water. Cover and bring to a boil. Reduce the flame and simmer for 20 minutes. Season with shoyu, black pepper and mirin. Cook another 5 minutes. Serve and garnish with parsley.
