Cook udon according to package directions for 5 minutes. Add the wakame flakes to the udon and continue cooking another 3 minutes until the udon is tender. Rinse the udon and wakame flakes and drain. Place in a bowl. Cube the baked tofu and toss with the udon. Combine the olive oil, scallions, shoyu and mix well. Pour over the udon and toss to evenly coat. Serve room temperature or slightly chilled.
