Maitake Mushrooms, Asparagus and Tofu Sauté

Ingredients
2 Tbsp fresh ginger root, finely grated
3 cloves garlic, minced
1/2 red bell pepper, sliced into thin strips
2 tsp Eden Extra Virgin Olive Oil
1 cup Eden Maitake Mushrooms, 1/2 package, soaked 20 minutes in warm water to cover
1 cup maitake soaking water
2 cups asparagus, ends trimmed, cut into 1 or 2 inch lengths
1 pound organic tofu, cubed
1 Tbsp Eden Shoyu Soy Sauce, or to taste

Directions
Heat oil in a large skillet. Sauté ginger, garlic and red pepper 1 to 2 minutes. Add maitake and sauté 3 to 5 minutes. Add 1 cup maitake soaking water, cover and simmer for 10 minutes. Add the asparagus and cook for 5 minutes. Add the tofu and shoyu. Sauté, mixing occasionally, for 3 to 5 minutes. Serve
