Lentil Curry

Lentil Curry


1 Tbsp Eden Extra Virgin Olive Oil

1 cup onion, coarsely chopped

30 ounces Eden Lentils w/Onion & Bay Leaf, 2 cans, do not drain

14 1/2 ounces Eden Diced Tomatoes w/Green Chilies, do not drain

1/4 cup grated unsweetened dried coconut

2 tsp mild curry powder, or to taste

1/4 tsp Eden Sea Salt, or to taste


In a large saucepan, heat the oil and sauté the onions for 2 to 3 minutes, stirring frequently. Add the lentils (with the liquid), tomatoes (with the liquid), coconut, curry powder and sea salt. Stir to mix and bring to a boil. Reduce the flame and simmer uncovered for 10 minutes, stirring occasionally.
