Lentil Curry



In a large saucepan, heat the oil and sauté the onions for 2 to 3 minutes, stirring frequently. Add the lentils (with the liquid), tomatoes (with the liquid), coconut, curry powder and sea salt. Stir to mix and bring to a boil. Reduce the flame and simmer uncovered for 10 minutes, stirring occasionally.
