Cucumber Salad

Cucumber Salad

Ingredients

2 tsp Eden Wakame Flakes

1 medium cucumber, sliced thin, peeled if waxed

1 cup red apple, sliced thin

Marinade

1 1/2 Tbsp Eden Organic Genmai Miso

1 Tbsp Eden Mirin

2 tsp Eden Organic Brown Rice Vinegar

1 Tbsp fresh parsley, minced

1/2 cup water

2 Tbsp orange juice, freshly squeezed

(Add All Eden Ingredients to Shopping Cart)

Directions

Soak wakame flakes in cold water to cover for 10 minutes, drain, and place in a bowl with the apples and cucumber. Place all ingredients for the marinade into a blender. Puree until smooth and creamy. Pour over the salad ingredients, mix thoroughly and marinate for 1 hour. Pour off marinade and place in a serving bowl.
