Saffron Gazpacho

Saffron Gazpacho

Ingredients

1/4 tsp saffron threads

1/2 cup boiling water

1 1/2 cups red onion, quartered

29 ounces Eden Organic Diced Tomatoes, 2 cans, do not drain
or any Eden Organic Diced Tomatoes

1 large cucumber, peeled, seeded, and cut into chunks

1 Tbsp Eden Extra Virgin Olive Oil

1 1/2 Tbsp Eden Organic Apple Cider Vinegar

1/2 tsp Eden Sea Salt, or to taste

1/4 cup fresh chives, finely chopped for garnish
or scallions

(Add All Eden Ingredients to Shopping Cart)

Directions

Place the saffron, onion, garlic and boiling water in a food processor. Process for 10 seconds and let sit for 5 minutes. Add the remaining ingredients, except the chives, and puree. Chill for 45 to 50 minutes before serving. Garnish with chives before serving.
