Chilled Mediterranean Kidney Bean Salad

Chilled Mediterranean Kidney Bean Salad


30 ounces Eden Kidney Beans, 2 cans, rinsed and drained

1/4 cup red onion, minced

1/2 cup Eden Diced Tomatoes, drained

1 medium cucumber, peeled if waxed, chopped

1/3 cup pitted black olives, rinsed and sliced

1/4 cup Eden Extra Virgin Olive Oil

1/4 cup lemon juice, freshly squeezed

2 cloves garlic, minced

1/4 tsp freshly ground black pepper

1 Tbsp fresh oregano
or 1 tsp. dried oregano

2 Tbsp green onion, finely chopped
or fresh parsley


In a large mixing bowl combine the beans, onion, tomato, cucumber and olives. In a small bowl whisk together the olive oil, lemon juice, garlic, pepper, oregano and green onions. Pour over the bean mixture and toss to thoroughly mix. Refrigerate for 1 hour before serving.
