Millet Squash Porridge

Serves 4 | Prep Time 10 minutes | Cook Time 35 minutes

Ingredients

2 cups precooked, leftover organic millet

1/2 cup buttercup squash, cubed
or butternut squash

1/4 cup onion, diced

1 pinch Eden Sea Salt

1 Tbsp Eden Toasted Sesame Oil

4 cups cold water

2 Tbsp fresh parsley, minced

1 1/2 tsp Eden Tekka
any Eden Organic Gomasio, Eden Organic Dulse Flakes, or Eden Shake

Directions

Heat the oil in a medium saucepan and sauté the onions for 2 to 3 minutes. Add the millet, squash, water and salt. Cover and bring to a boil. Reduce the flame to medium-low and simmer for 30 to 35 minutes, until creamy. Place into individual serving bowls and garnish each with parsley and a small amount of tekka or any Eden condiment. Serve hot on a cold day.
