Red Pepper Miso Sauce


  • 1 Tbsp Eden Extra Virgin Olive Oil
  • 2 cloves garlic, minced
  • 1 cup onion, thinly sliced
  • 3 cups red bell pepper, thinly sliced
  • 3/4 cup Edensoy Original
    Edensoy Extra Original, or Edensoy Unsweetened
  • 1 1/2 Tbsp Eden Genmai Miso, dissolved in 3 T. cold water, or to taste
  • 2 tsp fresh parsley, finely minced


Heat the oil in a skillet and sauté the garlic and onions for 1 to 2 minutes. Add the peppers and sauté another 3 minutes. Add the Edensoy and pureed miso. Cover, reduce the flame and simmer 5 minutes, without boiling, until the onions and peppers are tender. Remove from the flame and mix in the parsley. Serve over any Eden brand pasta, cooked organic polenta or other organic grains.
