Italian Cannellini Bean Salad

Ingredients
15 ounces Eden Organic Cannellini (White Kidney) Beans, drain and rinse
5 cups baby salad greens
1 cup green bell pepper, thinly sliced
1 cup red bell pepper, thinly sliced
1/2 cup celery, thinly sliced
1/2 cup red onion, sliced into thin rings
1 1/2 cups artichoke hearts, drained, quartered
Vinaigrette
2 1/2 Tbsp Eden Red Wine Vinegar
2 Tbsp Eden Extra Virgin Olive Oil
2 Tbsp fresh basil, finely chopped
1 Tbsp fresh parsley, finely chopped
1 clove garlic, minced
1/4 tsp Eden Sea Salt
1/4 cup Eden Organic Diced Tomatoes, drained
1/8 tsp freshly ground black pepper
(Add All Eden Ingredients to Shopping Cart)
Directions
Place all ingredients for the vinaigrette into a blender or food processor and pulse several seconds.
Combine the beans, salad vegetables and vinaigrette. Toss to mix and serve.
