Brown Rice and Lentils

Serves 4 | Prep Time 10 minutes | Cook Time 1 hour

Brown Rice and Lentils

Ingredients

1 cup organic long grain brown rice, washed and drained

1 1/2 cups water

1 pinch Eden Sea Salt

15 ounces Eden Organic Lentils w/Onion & Bay Leaf, do not drain
or cooked Eden Organic Dry Green Lentils

3 Tbsp Eden Extra Virgin Olive Oil

3 1/2 cup onions, sliced thin

1/4 tsp freshly ground black pepper

1/4 cup fresh parsley, minced

Directions

Heat oil in a medium, heavy saucepan. Sauté onions over a medium flame for about 10 to 15 minutes until translucent. Add the rice and sauté another 5 minutes. Add water, lentils, salt and pepper. Cover and simmer for 45 minutes to 1 hour. Mix in the parsley and place in a serving bowl.
