Brown Rice and Lentils

Cook Time 1 hour
Heat oil in a medium, heavy saucepan. Sauté onions over a medium flame for about 10 to 15 minutes until translucent. Add the rice and sauté another 5 minutes. Add water, lentils, salt and pepper. Cover and simmer for 45 minutes to 1 hour. Mix in the parsley and place in a serving bowl.
