Heat oil in a medium skillet. Sauté onions, mushrooms and salt for 2 to 3 minutes. Add flour and sauté, stirring constantly, for 2 minutes until all vegetables are coated with the flour. Slowly add the Edensoy, stirring constantly until the sauce thickens. Add the mirin. Simmer on low, uncovered, stirring occasionally for 10 to 15 minutes. Add pepper and parsley. Mix and place in a serving bowl.
