Mushroom Gravy

Ingredients

  • 1 Tbsp Eden Extra Virgin Olive Oil
    or Eden Safflower Oil
  • 1/4 cup onion, finely minced
  • 1 cup button mushrooms, finely diced
  • 1 cup baby portabella mushrooms, finely chopped
  • 1/2 tsp Eden Sea Salt, or to taste
  • 2 Tbsp organic unbleached white flour
  • 2 cups Original Edensoy
    or Unsweetened Edensoy
  • 2 tsp Eden Mirin, optional
  • 2 Tbsp fresh parsley, minced
  • 1/8 tsp freshly ground black pepper, or to taste

Directions

Heat oil in a medium skillet. Sauté onions, mushrooms and salt for 2 to 3 minutes. Add flour and sauté, stirring constantly, for 2 minutes until all vegetables are coated with the flour. Slowly add the Edensoy, stirring constantly until the sauce thickens. Add the mirin. Simmer on low, uncovered, stirring occasionally for 10 to 15 minutes. Add pepper and parsley. Mix and place in a serving bowl.
