Buckwheat Crepes


  • 1/2 cup organic buckwheat flour
  • 1/2 cup organic whole wheat pastry flour
  • 1/8 tsp Eden Sea Salt
  • 1 Tbsp organic roasted soybean flour (kinako)
  • 1/2 cup Original Edensoy
    or Unsweetened Edensoy
  • 1 heaping Tbsp Eden Kuzu Root Starch
  • 1/2 cup water
  • Eden Extra Virgin Olive Oil


Mix dry ingredients together. Combine Edensoy, kuzu and water. Stir until kuzu is dissolved. Mix wet and dry ingredients together. Place in the freezer for 5 minutes to chill the batter. Lightly oil a crepe pan and heat up. Pour 1/4 cup batter in and keep the pan moving. Using a spiral motion with a spoon, spread the batter out evenly. When tiny bubbles appear on top, turn the crepe over. Turn it over again and again until well browned. Remove and repeat the process. Crepes may be stacked with baking paper in between each to keep them warm while cooking the rest.
