Shiitake Mushroom Gravy

Ingredients

8 Eden Whole Shiitake Mushrooms, soaked 20 minutes in 1 cup hot water
or 1/2 package Eden Sliced Shiitake Mushrooms

2 cups water, including shiitake soaking water

3 Tbsp Eden Organic Kuzu Root Starch, dissolved in 4 T. cold water

1/2 cup onion

1/2 tsp Eden Extra Virgin Olive Oil

1 tsp fresh parsley, minced

1 Tbsp Eden Shoyu Soy Sauce, or to taste

Directions

Remove the tips of the shiitake, discard stems and slice the caps. Reserve soaking water. Sauté the onion and shiitake in olive oil for 2 to 3 minutes. Add the water and shiitake soaking water to the skillet, cover and bring to a boil. Reduce the flame to medium-low and simmer for 5 to 7 minutes. Reduce the flame to low, add the shoyu and simmer 2 to 3 minutes. Turn off the flame and stir in the parsley. Serve hot over cooked organic grains, vegetables, or any Eden Pasta.
