Maitake Marinara and Spaghetti

Cook Time 25 minutes
Cook spaghetti as package directs and drain. While pasta is cooking, sauté garlic and onions for 1 to 2 minutes. Add maitake (soaking water may be reserved for soup stock) and sauté 2 minutes. Add spaghetti sauce, carrots, zucchini and basil. Cover and bring to a boil. Reduce flame to medium low and simmer for 15 minutes. Add shoyu, if desired, reduce flame and simmer 2 to 5 minutes. Serve over cooked pasta.
