Maitake Marinara and Spaghetti

Ingredients
14 ounces Eden Organic Parsley Garlic Spaghetti, 1 package Eden Organic Kamut Spaghetti, or 100% Whole Grain Spaghetti
2 Tbsp Eden Extra Virgin Olive Oil
2 cloves garlic, minced
1 medium onion, chopped
4 cups Eden Maitake Mushrooms, 2 packages, soaked 10 minutes in warm water to cover
25 ounces Eden Organic Spaghetti Sauce, 1 jar or Eden Organic Spaghetti Sauce - No Salt
2 cups carrots, sliced thin
1 cup zucchini, chopped
1/2 tsp dried basil
1 tsp Eden Shoyu Soy Sauce, optional

Directions
Cook spaghetti as package directs and drain. While pasta is cooking, sauté garlic and onions for 1 to 2 minutes. Add maitake (soaking water may be reserved for soup stock) and sauté 2 minutes. Add spaghetti sauce, carrots, zucchini and basil. Cover and bring to a boil. Reduce flame to medium low and simmer for 15 minutes. Add shoyu, if desired, reduce flame and simmer 2 to 5 minutes. Serve over cooked pasta.
