Black Eyed Pea Salad - New Year's

Ingredients

  • 30 ounces Eden Black Eyed Peas, 2 cans, drained
  • 14 1/2 ounces Eden Diced Tomatoes w/Green Chilies, drained
  • 1/2 cup green bell pepper, diced
  • 1/2 cup red bell pepper, diced
  • 1 cup organic sweet corn, fresh or frozen, blanched 1 minute
  • 1/2 cup green onions, finely chopped
  • 1/4 cup red onion, finely minced
  • 1/2 cup celery, diced
  • 1 cup cucumber, peeled, if waxed and chopped
  • Vinaigrette
  • 3 1/2 Tbsp Eden Red Wine Vinegar
    or Eden Apple Cider Vinegar
  • 1 clove garlic, minced
  • 1/4 tsp dried oregano
  • 1/2 tsp dried basil
  • 2 Tbsp fresh parsley, finely chopped
  • 1/4 cup water
  • 2 Tbsp Eden Barley Malt Syrup
    or organic maple syrup
  • 1/4 tsp Eden Sea Salt
  • 1 tsp Eden Shoyu Soy Sauce

Directions

Mix all salad ingredients together in a large mixing bowl. Place all dressing ingredients in a blender and blend several seconds. Pour dressing over salad and mix. Refrigerate for 1 hour before serving or may be served room temperature.
