Succotash

Serves 6 | Prep Time 15 minutes | Cook Time 20 minutes

Ingredients

1 Tbsp Eden Extra Virgin Olive Oil

1 cup onion, diced

1 1/4 cups zucchini, sliced into half rounds

1 small red bell pepper, diced

3 Tbsp organic sunflower seeds, optional

2 cups organic sweet corn, fresh or frozen

30 ounces Eden Organic Butter Beans, 2 cans, do not drain

1/8 tsp freshly ground black pepper, or to taste

1/2 tsp ground cumin

1 tsp Eden Sea Salt

Directions

Heat the oil in a medium skillet, and sauté the onions until lightly browned, about 5 minutes. Add the zucchini and bell pepper. Sauté another 2 to 3 minutes. While the vegetables are sautéing, pulse the sunflower seeds in a food processor or blender until coarsely ground. Add all remaining ingredients, mix and bring to a boil. Reduce the flame to medium-low, cover and simmer for 20 minutes. Remove and serve while hot.
