Pasta Primavera

Ingredients
12 ounces Eden Organic Spelt Ziti Rigati, 1 package or Eden Organic Kamut & Buckwheat Rigatoni
2 cups broccoli, small florets
2 cups cauliflower, small florets
1 cup carrots, sliced thin
1/2 cup artichoke hearts, water packed, drained, sliced in quarters
2 cloves garlic, minced
3 Tbsp Eden Extra Virgin Olive Oil
1/3 cup water or vegetable broth
1/2 tsp Eden Sea Salt
1/4 tsp freshly ground black pepper, or to taste
2 Tbsp fresh basil, finely chopped
1 small organic tomato, cubed

Directions
Cook pasta according to directions, drain and set aside. Heat oil in a large skillet and sauté garlic for 1 to 2 minutes. Add the broccoli, cauliflower, carrot, artichoke hearts and sea salt. Sauté for 2 to 3 minutes. Add water, cover and steam 2 minutes. Turn off flame, add pepper, pasta, basil and tomato. Toss thoroughly and serve.
