Minted Couscous with Pine Nuts & Chickpeas


  • 2 cups water
  • 1 cup green peas, fresh or frozen
  • 1 pinch Eden Sea Salt
  • 2 cups organic couscous
  • 1 Tbsp Eden Ume Plum Vinegar, or to taste
  • 1/2 cup pine nuts, lightly pan toasted
  • 1/3 cup scallions, finely chopped
  • 1/4 cup fresh mint leaves, finely chopped
  • 1 cup red radishes, sliced thin and blanched 30 seconds in boiling water
    or leave raw
  • 15 ounces Eden Garbanzo Beans, drained
    or cooked Eden Dry Garbanzo Beans
  • 2 Tbsp Eden Extra Virgin Olive Oil


Place water, peas and sea salt in a sauce pan, cover and bring to a boil. Stir in couscous, cover and bring to a boil. Turn off flame, leave covered and allow to sit for 5 minutes. Place in a large mixing bowl and fluff to cool. Mix in all remaining ingredients and serve room temperature or chilled.
