Place the juice, agar agar flakes and sea salt in a medium saucepan and bring to a boil, stirring occasionally. Reduce the flame to low and simmer 2 to 3 minutes until the agar flakes have dissolved. Place the peaches in a shallow bowl or equal amounts in individual fruit cups and pour the hot juice over. Refrigerate until gelled, about 1 1/2 hours. Eat as is or serve with your favorite topping, fresh berries, roasted and chopped nuts or granola.
