Cream of Broccoli Potato Soup

Serves 7 | Prep Time 10 minutes | Cook Time 15 minutes

Ingredients

2 Tbsp Eden Extra Virgin Olive Oil

1 medium onion, diced

1/2 cup celery, diced

2 medium organic potatoes, peeled and chopped

4 cups broccoli, chopped

1 cup water

3 cups Edensoy Original
Edensoy Extra Original or Edensoy Unsweetened

1 tsp Eden Sea Salt

2 tsp fresh parsley, minced

1/4 tsp white pepper
or black pepper

Directions

Heat oil in a soup pot and sauté onions. Add all ingredients except parsley and pepper. Cover and simmer over a low flame for 10 minutes or until broccoli is soft. Blend ingredients in a food processor or blender until smooth and creamy. Place back in the pot, add the parsley and white pepper. Simmer 1 to 2 minutes. Serve hot or chilled. Delicious served with Eden Tofu Sour Cream as a garnish. Please see Eden's recipe for directions.
