Fresh Corn and Black Soybean Salsa

Serves 5 | Prep Time 10 minutes | Cook Time 2 minutes

Ingredients

1 cup organic sweet corn, fresh or frozen, blanched 1 to 2 minutes

15 ounces Eden Organic Black Soybeans, drained
or Eden Organic Black Beans

2 Tbsp red bell pepper, diced

2 Tbsp green bell pepper, diced

1 clove garlic, minced

1 Tbsp lime juice, freshly squeezed

1/2 tsp ground cumin

1/4 cup onion, diced

1/2 tsp dried cilantro
or dried parsley

1/2 tsp Eden Sea Salt

1/2 cup green onions, chopped

(Add All Eden Ingredients to Shopping Cart)

Directions

Mix all ingredients together and serve room temperature or chilled with Eden Brown Rice Chips, Sea Vegetable Chips, Vegetable Chips, Wasabi Chips or your favorite organic corn chips.
