Couscous and Black Soybean Salad

Ingredients
1 1/2 cups organic couscous
1 1/2 cups water
1 pinch Eden Sea Salt
15 ounces Eden Organic Black Soybeans, rinsed and well drained
1/3 cup celery, finely diced
14 1/2 ounces Eden Organic Diced Tomatoes w/Green Chilies, drained or any Eden Organic Diced Tomatoes
1/2 cup red bell pepper, diced
1/4 cup green onions, finely chopped
1/3 cup green olives, finely chopped or pitted black olives
1/4 cup red onion, minced
1/4 cup fresh parsley, minced
2 Tbsp fresh dill, chopped
2 cloves garlic, finely minced
1/4 cup lemon juice, freshly squeezed

Directions
Bring water and sea salt to a boil in a sauce pan. Add couscous, cover and turn off the flame. Allow couscous to sit for 5 minutes. Remove and place in a large mixing bowl. Toss to fluff and cool the couscous. Mix in all remaining ingredients and serve room temperature or chilled.
