Black Soybean Dip with Fresh Jalapeno Pepper


15 ounces Eden Black Soybeans, 1 can, reserve cooking liquid

1 clove garlic, minced

1/2 tsp ground cumin

1 tsp Eden Ume Plum Vinegar

1 Tbsp Eden Extra Virgin Olive Oil

2 Tbsp red onion, minced

2 tsp fresh parsley, minced
or cilantro

1 small jalapeno pepper, seeded and minced


Place all ingredients in a food processor, and blend until smooth and creamy, adding the bean cooking liquid a little at a time until it is the right consistency. Serve with Eden Brown Rice Chips.
