Barley Lentil Soup

Ingredients

2 Tablespoons Eden Extra Virgin Olive Oil
2 cloves garlic, minced
1/2 cup onion, diced
5 cups water
1/2 cup organic pearled barley, rinsed
15 ounces Eden Organic Lentils w/Onion & Bay Leaf, do not drain
1/4 cup celery, diced
1/4 cup carrot, diced
1 cup spinach, chopped
1/4 teaspoon Eden Sea Salt
1/4 cup fresh parsley, minced

(Add All Eden Ingredients to Shopping Cart)

Directions

Heat oil in a soup pot. Sauté garlic and onion for 3 to 4 minutes. Add water, barley and sea salt. Cover and simmer for 20 minutes. Add all remaining ingredients except the parsley, cover and simmer another 5 to 7 minutes. Garnish with parsley.
