Soba in Spicy Wasabi Broth

Serves 4 | Prep Time 5 minutes | Cook Time 20 minutes

Ingredients

8 ounces Eden Organic Soba, 1 package
or any Eden Soba

4 cups water

1/4 piece Eden Kombu, 2 inches long

3 Tbsp Eden Mirin

1 1/2 Tbsp Eden Shoyu Soy Sauce, or to taste

1 1/2 tsp Eden Wasabi Powder (Japanese Mustard)

1 Tbsp Eden Shake

1 sheet Eden Sushi Nori, cut into 2 inch long thin strips, for garnish

1/4 cup green onions, finely sliced for garnish

Directions

Cook pasta as package directs, rinse, drain and set aside. Place the water and kombu in a sauce pan, cover and simmer 5 minutes. Remove kombu and set aside for later use or discard. Reduce flame to low, add the mirin, wasabi powder and shoyu. Place the soba in the broth to heat up. Place soba in serving bowls and ladle the broth over. Garnish each bowl with equal amounts of Eden Shake, Nori, and green onion.
