Miso Soup - Broccoli & Shiitake

Soak shiitake for 10 to 20 minutes in hot water to cover. Remove the stems from the shiitake, discard stems and slice the caps. Reserve soaking water. Place the water, shiitake soaking water, shiitake and wakame flakes in a pot. Cover and bring to a boil. Reduce the flame to medium and simmer 5 minutes until shiitake are tender. Add the carrots and broccoli. Cover and simmer 1 minute. Reduce the flame to low. Remove the cover. Place the miso in a small cup, add a little hot soup broth and puree until creamy. Add the pureed miso to the soup stock. Simmer, without boiling, for 2 to 3 minutes. Serve and garnish with chopped green onions.
Eden Bonito Flakes can be added to the soup at the beginning. For this recipe use 2 tablespoons, crumbled with your hands into the stock.
