Miso Soup - Dried Tofu

Serves 4 | Prep Time 25 minutes | Cook Time 20 minutes

Miso Soup - Dried Tofu

Ingredients

4 cups water, including shiitake soaking water

4 pieces Eden Dried Tofu, soaked 10 minutes in hot water to cover

1/2 tsp Eden Wakame Flakes

1 cup carrots, julienned

1/4 cup organic sweet corn, fresh or frozen

2 tsp scallions, finely chopped

2 1/2 Tbsp Eden Organic Shiro Miso, pureed in 3 Tbsp. hot soup broth or water

6 Eden Whole Shiitake Mushrooms, soaked 20 minutes in hot water to cover, slice cap, discard stem

1/2 cup snow peas, remove stems

Directions

Squeeze out water from tofu and discard soaking water. Rinse slices under cold water and squeeze again. Slice tofu into thin strips. Place the tofu, shiitake, shiitake soaking water and plain water in a saucepan. Cover and bring to a boil. Reduce the flame to medium-low and simmer for 15 minutes. Add wakame, carrots and sweet corn. Cover and simmer 2 to 3 minutes. Reduce flame to low, add pureed miso and snow peas. Simmer uncovered for 2 minutes. Serve and garnish with scallions.
