Tomato Chili Pepper Salsa

Heat oil, sauté onion, garlic, green and red peppers until onions are translucent. Add tomatoes, salt, barley malt, and red wine vinegar. Simmer for 30 minutes. Add hot pepper, cumin, black pepper, and parsley or cilantro. Simmer 5 to 10 minutes more. Turn off flame and add cayenne, if desired. Refrigerate to chill and blend flavors.
